Plant Based "Easy to Cook" Ratatouille - Paired with some Beautiful "King Oyster Mushroom Scallops"

The better you can make the good stuff taste, vegetables, the more of them you'll eat! It's that time of the year, it's time to harvest the remainder of your garden, at least where we live! What not better to utilize a good mix of those vegetables than an easy to make ratatouille? To top it off, we are pairing it with some beautiful King Oyster Mushroom Scallops, this maybe took us 15 - 20 minutes to cook!

For today's recipe, you will need the following ingredients below:


Ratatouille

2 tsp olive oil

2 clove of garlic

2 shallots

2 pepper

1 egg plant

1 zuccini

2 tbsp tomato paste

2 fresh large tomatoes

Quarter bunch italian parsley

2 tbsp of nutritional

Salt & pepper to taste


Scallops

3 King Oyster Mushrooms

4 tbsp grapeseed oil

Salt pepper to taste

Pinch of Paprika

Pinch of garlic powder

Pinch of nutritional Yeast


The first thing you will want to do is prep all of your veggies, it's important to cut them roughly the same size, we did diamond shapes for our egg plant, peppers and zucchini. Next, heat the pan and add in the olive oil. Mince the garlic and dice the shallots. Once the pan heats up, sear for 30 seconds or until golden brown and add in rest of vegetables.



Sear all vegetables for 2 - 3 minutes. Next, cut your tomatoes into cubes, add tomatoes, tomato paste and ½ cup of veggie stock, add in remaining ingredients, simmer for 12 minutes. Once simmered for 12 minutes, add in the fresh herbs!



Time for our mushroom scallops! This is super simple, cut 1 inch pieces, roughly the size of a scallop. Heat the pan add in olive oil, cut into 1 inch pieces, make small cuts on the top and the bottom for the seasoning to really absorb into the mushrooms.


Next, take the remaining ingredients, season, sear on both sides until golden brown, 2 minutes on each side.



Time to plate everything, you want to avoid overcooking the mushrooms as they can become rubbery.
