REAL Food – “Plant Based High Protein Kale & Chickpea Stuffed Portobello Mushroom” for REAL people!

Today we wanted to share a quick and easy recipe that you can make in under 20 minutes that is packed full of nutrition and protein! REAL Food – “Plant Based High Protein Kale & Chickpea Stuffed Portobello Mushroom” for REAL people!

I can tell you with confidence that this is yet another one to impress the family and friends, it was so good and so simple to make. You’ll have no trouble at in recreating this dish!

Two quick facts that you might not know:

1. Mushrooms – Low in calories and fat and cholesterol-free, mushrooms contain a modest amount of fiber and over a dozen minerals and vitamins, including copper, potassium, magnesium, zinc and a number of B vitamins such as folate!

2. Kale – The nutrients in kale can help boost wellbeing and prevent a range of health problems. It contains fiber, antioxidants, calcium, and vitamin K, among others. Even the chlorophyll in kale may have health benefits. It is also a good source of vitamin C and iron.

You’ll need the following ingredients, get everything gathered and let’s get cooking!

Ingredients

Roasted Portebllo Mushrooms

  • 2 Portobello Mushroom
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Rosemary 

Stuffing

  • 1 bunch of kale
  • 1 cup of chickpeas
  • 3 cloves of garlic
  • Half a bunch of green onions
  • Salt Pepper
  • Oil
  • 2 tbsp Nutritional Yeast
  • ¼ plant based milk (un-sweetened)

Topping

  • 2 tbsp panko bread crumbs
  • 2 tbsp shredded cheese alternative
  • 2 tbsp nutritional yeast

Tahini Black Sesame Aioli

  • ¼ cup tahini paste
  • Juice of 1 lemon
  • 2 tbsp black sesame seeds
  • Salt & pepper to taste
  • 1/8th cup water

Time to get our Portobello Mushrooms prepped. But first, preheat the oven to 400.

Break off the stems and wash the mushrooms under cold water.

Next, use salt and pepper to taste.

Take your olive oil and balsamic, pour over top of each mushroom.

Next pour a bit into your hands and rub the entire mushroom for maximum flavour!

Take your fresh rosemary, and place inside the caps.

After that’s finished, place in the oven for 12 – 15 minutes.

Time to get our beautiful kale prepped. Kale is super versatile and adds so much nutrition to any recipe along with some unique flavour. You will want to wash your kale and then thinly slice it to perfection.

Now take your kale…

And place it into your frying pan, which should be hot on medium heat and include your grape seed oil. Saute for 1 – 3 minutes until soft. Add in the remaining ingredients and cook for 5 minutes.

Now that your mushrooms are done roasting, time to get them stuffed! Take the stuff and simply place on top. Once done, take the “topping” ingredients and place on top as well, broil for 1 – 2 minutes, watching closely so it does not burn!

As it’s in the oven, quickly whip up your tahini aioli. This is simple, take all ingredients and mix until smooth, add more water if needed.

Once finished, drizzle over and… serve! Super easy recipe that is packed full of so much flavour and nutrients!
