Today we wanted to share a quick and easy recipe that you can make in under 20 minutes that is packed full of nutrition and protein! The two stars of the dish are gnocchi and Brussels sprouts.

In case you didn’t already know but – “Brussels sprouts are high in fiber, vitamins, minerals and antioxidants, making them a nutritious addition to your diet. It’s also an amazing source of Vitamin K.
Potato Gnocchi is an Italian dish, one of Conrad’s favorite places to visit when in Europe! If you want this dish to be ready in under 20 minutes, we recommend purchasing a minimal ingredient gnocchi from your local grocery store, we personally used the President Choice brand as it only had 5 ingredients.

Now on to the good part, you’ll need the following ingredients listed below:


Ingredients
Potato Gnocchi
- 500grams of potato gnocchi (boil and follow instructions on package)
- 2 tbsp Grape seed oil
- Half of preserved lemon or lemon zest of half a lemon
- Half tsp of fresh chopped rosemary
- Half tsp of fresh chopped thyme
- Pinch of salt
- Pinch of pepper
- 1 tsp of nutritional yeast
Warm Brussels Sprouts Salad with Pumpkin Seed
- 500grams of Brussels sprouts cleaned Brussels sprouts (remove outer leaves)
- 2 tbsp Olive oil
- 2 tbsp Balsamic vinegar
- ½ cup of pumpkin seeds
- Salt (to taste)
- Pepper (to taste)
The first thing we are going to do is prepare our potato gnocchi, bring a pot of water to boil and follow the instructions on the ones you purchased.

Once they start to float, you know that they are done! Strain and let’s start working on our warm salad!

Take your sprouts and clean them, you simply cut off the end (not too far up!), peel off the outer leaves, wash and your done!
Using your chefs knife, thinly slice the sprouts, the thinner the better! Once done, prepare your pare as well by cutting in half and thinly slicing.

Heat your frying pan using a little bit of grape seed, saute along with pumpkin seeds and pair slices for one minute to two minutes on high heat until golden brown.

Take off stove, add remaining ingredients, stir, place on bottom of plate, we will let it slightly cool off while we quickly finish off our gnocchi.
This part is fairly easy, heat your pan adding in the oil (ensure it is as hot as possible to avoid the gnocchi from sticking to the pan) and seer for 1 – 2 minutes. Add in the renaming ingredients once golden brown.

Time to get this beautiful, healthy and nutritious dish plated! Always be mindful of presentation, we added in some fresh herbs, a splash of balsamic and sprinkled the nutritional yeast on top.
