Protein is always top of mind, for a lot of people, as it should be! However, you still need to get a good amount of vitamins, minerals, healthy fats and fiber into each meal, which this recipe helps with!
Everyone is always in a rush, so how about a high protein meal packed full of nutrition that tastes AMAZING in under 10 minutes, is it possible? Let’s find out! Today we are cooking some beautiful soba noodles with a supercharged peanut Kimchi.




As always we use limited ingredients in all of our recipes, please see below:

Ingredients
Noodles
- 2 x 50 gram packs of Soba Noodles
- 2 tbsp olive oil
- 1 tbsp soya sauce
Veggies, Fats & Kimchi
- 1 bunch of swiss chard (kale or bok choy will work well too!)
- 10grams of seaweed (or available sea vegetable) – or you can use dolce flakes
- 2 tbsp of peanut butter
- 2 tbsp of Back to YouRoots Kimchi
Garnish
- 1 tsp black sesame seeds
- 2 tbsp of roasted peanuts for garnish on top
- cilantro for garnish

Prep your swiss chard by slicing and dicing it into small bit sized pieces.

Take 1 tbsp of olive oil and turn pan onto medium / high heat. Once heated add in the swiss chard to start sauteing, this only takes 1 – 2 minutes.

Most seaweed is sold in dry form, simply soak it, rinse and get chopping. We will chop the seaweed into small bite size pieces as well. Seaweed is an amazing source of iodine and can add a lot of flavour to any dish.

Add the seaweed into the pan and let it saute with the swiss chard, everything should really be coming together now!

Next, add in your peanut butter with a bit of water to help break it down and smooth it out. This add’s a nice savory taste to the dish. Add in your beautiful Back to YouRoots kimchi and you’re good to go! It should look something like below.

Take your soba noodles…

And get them into some boiling water, cook for 7 minutes!

Immediately strain and rinse, toss back into the pot. Mix in the remaining olive oil and soy sauce, now quickly start plating your meal! Noodles in first, next is the vegetables which you’ve cooked to perfection and then your garnish! Quickly chop the cilantro and put the garnish on. You’re good to go, what an easy to make meal, how long did it take?
