Plant Based Fiesta – How to Cook Meatless “Pulled Pork” with Soft Shell Tacos, an Avocado Aioli and a Watermelon & Red Onion Cilantro Salsa

Today we are having a “Plant Based Fiesta” and will be teaching you how to cook a meatless “pulled pork” to stuff into some soft shell tacos which will be paired with an avocado aioli and a beautiful watermelon & red onion cilantro salsa.

This recipe will only take you about 20 minutes and requires about 10 minutes of prep time within the 20 minutes, as the “pulled pork” needs time to roast. It’s such an amazing, simplistic recipe that is packed full of so much flavour and goodness! This was a fun meal that gave us some restaurant like feelings, minus the food hangover!

You’ll need the following ingredients below, this recipe is perfect for two people, or makes a great appetizer for 4 – 6 people.

Ingredients

Meatless Pulled Pork

  • 1 can drained green jack fruit
  • 1 tsp Smoked Paprika
  • 1 tsp garlic powder
  • 1 tbsp grape seed oil
  • 2 tbsp soya sauce
  • 1 tsp corn starch
  • Salt pepper to taste

Grilled Watermelon and Red Onion Cilantro Salsa

  • 1 ½ cup cubed watermelon
  • ½ half red onion diced
  • 1 bunch of cilantro chopped
  • 1 fresh lime juiced
  • 1 tsp of Apple cider vinegar
  • 1 tbsp olive oil
  • Salt pepper to taste

Avocado Aioli

  • 1 avocado
  • 1 tbsp nutritional yeast
  • 2 tbsp of vegan mayo
  • Salt pepper

Preheat your oven to 400, take your jack fruit and rinse it, place into a bowl. Mix in all ingredients and massage in, avoid breaking too many large pieces as they will pull apart nicely after you finish roasting them. Once done place on a baking pan with parchment paper. use the image below for a good reference of what the pieces should look like, ours turned out perfectly!

Bake for 20 minutes, once finished pull out of the oven and place into a large plate. Take two forks and start separating the large pieces. You can also use your hands as well! I have to say, this turned out absolutely amazing and has an identical texture to pork with half the calories. It should look something like this when finished.

Next we will get started on our beautiful watermelon and red onion cilantro salsa. First take your watermelon and cut it into small cubed pieces, about 1 1/2 cups. If you watch our cooking show, we have an easy way to do this and it will give you a good reference point. Next take 1/2 red onion and dice it. Take your cilantro bunch and chop it, placing everything into a bowl.

Add the remaining ingredients and mix everything together with a spoon or your hands. The final product will look something like this and is a very versatile salsa!

Lastly is the avocado aioli, this literally takes about 30 seconds to prepare and will bring everything together giving you a lot of healthy fats! Take your avocado, cut in half, take out the seed. Cut cubes into the avocado, use a spoon to dig them out and put into a bowl, watch our video for a reference. Take all other ingredients, place into the bowl and mash everything together until you get your desired texture!

Take your soft shell tacos and quickly heat in a pan with some olive oil, we personally use corn tortillas as they are made with minimal ingredients, I believe three to be exact. The last thing you want to do is purchase a highly processed taco shell with a ton of ingredients that you cant understand as it defeats the purpose of what we are doing, eating wholefoods!
