Welcome Back to YouRoots! Chef Berne is at it again and a lot of veggies were “murdered” in this episode for our enjoyment, and enjoyed they were! Joking aside, although both Chef Bernie and Conrad are plant based (you might be too if you follow us!), not everyone is and that’s ok as we are all on our own journey. We just want to remind people that some of the foods we consume in our society, at one time did have a heartbeat. Which is why it’s so important to be very mindful, appreciative and not wasteful when it comes too food.
As always, we are on a mission to help you incorporate more plants into your lifestyle and to teach you how to make nutritious wholefoods as delicious as possible. The better you can make the good stuff tastes, vegetables, the more of them you’ll eat! Always remember that the things you decide to put into your body will have a direct impact on your short and long term health both physically & mentally.
Today we are cooking a kohlrabi soup that is 100% plant based and very creamy, along with some beautiful “smoked” oyster mushrooms. Everything turned out amazingly and as always was incredibly easy to make!

Kohlrabi originated in Europe, no wonder it’s such a beautiful and fashionable vegetable! It is rich in vitamins A, C and K, as well as B-vitamins. It also contains copper, manganese, iron, potassium, dietary fiber and calcium, and is rich in antioxidant compounds like phytochemicals and carotenes, what more do you need? This vegetable is packed full of nutrients!

You’ll need the following ingredients:
Ingredients
Kohlrabi Soup
- 2 medium size Kohlrabi
- 1 tbsp olive oil
- 2 cups of plant milk
- 2 tbsp whole wheat flour
- 1 tsp Garlic powder
- 2 tbsp nutritional yeast
- Salt & Pepper to taste
“Smoked” Oyster Mushrooms
- 1 cup of pulled oyster mushrooms
- 1 tsp of smoked paprika
- 1 tsp of garlic powder
- 1 tsp of corn starch
- 1 tsp of salt pepper
- 1 tsp of olive oil
Take your kohlrabi and peel. Once done, cut into slices, take the slices and cut them into quarter size cubes. Once done, put into a pot with olive oil on medium – high heat and cook until they start to caramelize, that should take 5 – 10 minutes. Once done, add in all of the renaming ingredients and simmer for five minutes.

Take half of the soup and put it into your mixer. This will allow the soup to still have some chunks of the beautiful kohlrabi. That’s it, the soup is ready to serve, it’s really that simple! It is packed full of flavour and most of all, a lot of nutrients!

Preheat the oven too 425. Next we will get the oyster mushrooms going. Tear into strips and place into a medium size bowl. Once completed, take all of the remaining ingredients and mix everything together.

Take the mushrooms and place onto a pan with parchment paper. Ensure you spread them out evenly so they crisp up! Bake for 10 minutes or until crispy. The smoked paprika is what will give the mushrooms that smokey flavour, which really compliments this soup!

All that’s left to do is plate everything, we put on some additional fresh herbs with the mushrooms on top – enjoy and let us know what you think about it in the comment section below!
