Plant Based Summer Vibes – Melon Carpaccio, Quinoa Brown Rice, Grilled Avocado & Veggies and Pesto!

I know the BTYR team has said “this is our best so far” but believe me, this is the BEST so far, it just keeps getting better and tastier!

To celebrate summer and some really good vibes, they are cooking up a Plant Based Santa Claus Melon Carpaccio (ironically they are only in season in the summer for a short time!), Quinoa Brown Rice, Grilled Avocado & Veggies, and a beautiful homemade Mint Green Pea Pesto!

As with any of our recipes, they are always nutritious and most of all delicious using simple ingredients, as much wholefoods as possible!

You’ll need the following ingredients below:

Ingredients

Santa Claus melon Carpaccio with extra virgin olive oil and fresh basil

  • ½ santa clause melon sliced thinly
  • 4 table spoons extra virgin olive oil
  • 4 table spoons of balsamic
  • Salt / pepper to taste
  • Half a bunch of fresh italian basil – chopped

Quinoa & Brown Rice

  • ½ cup brown rice
  • ½ cup quinoa
  • 2 cups of water
  • 2 cloves of garlic
  • 1 tsp of sea salt

Grilled Asparagus, Mushrooms, Avocado and Fresh Herbs

  • 2 tbsp of olive oil
  • Half a lemon juiced
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt pepper to taste

Mint Green Pea Pesto

  • 2 bunch of fresh pint
  • 1 cup of green peas
  • ½ cup extra virgin olive oil
  • 1 lime juiced
  • Salt pepper to taste
  • ½ cup of walnuts

Now that you have everything ready, you will want to prep the beautiful Santa Claus melon. Cut it in half, peel it and scoop out the seeds. This is important, you will want to thinly slice the melon to ensure it has the same consistency as a carpaccio (this means thinly sliced in Italian). Once done, plate, add the remaining ingredients spreading them out evenly and then, you’re done!

Let’s get the brown rice & quinoa going. First, rinse the brown rice and quinoa. Next get a pot ready, add water salt and peeled garlic. Bring to a boil bring to a boil and simmer for 20 – 25 mins or until water is gone.

While we are waiting for the brown rice & quinoa, let’s get going on our grilled veggies. Wash all of the veggies. Prep your avocado, cut in half and remove seed, put a bit of olive oil on both pieces. Take all of the remaining ingredients and add to the veggies, squeezing the lime.

Take your veggies, and grill until nice and tender! This usually takes 2 – 4 minutes on each side depending how hot your BBQ gets!

Lastly, the pesto is easy and ironically the start of the dish. It really makes everything pop and adds in some nice calories to the meal! All you do is add all of the ingredients into your mixer and blend until you have a consistency you like.

Time to plate everything as your brown rice & quinoa is likely ready! We have a good example of what it can look like below, we stuff some of that beautiful pesto into the avocado along with some walnuts as garnish and some fresh herbs!
