Its packed full of all the good stuff you need and as an added bonus, is delicious! How do you eat Kimchi? Straight out of the jar! But it is such a versatile product and can help bring a lot of dishes to life.
Today we are going to be making Kimchi Nori & Peanut Rolls and we will be cooking a beautiful Kimchi Fried Rice & Kimchi Rosti!

Ingredients
Kimchi Nori & Peanut Rolls:
- ½ cup peanut butter
- ¼ rice wine vinegar
- ¼ cup warm water
- Rice Paper
- Nori Sheets
- Pinch of sesame seeds
- Salt and pepper to taste with a pinch of dried ginger.
Kimchi Fried Rice:
- 1 cup of Back To YouRoots Kimchi
- 2 cups of cooked brown rice
- 3 tbsp Sesame Oil
- ½ bunch of green onions
- 1 Carrot chopped
- 1 Celery chopped
- Fresh cilantro
Kimchi Rosti:
- 4 peeled and shredded potatoes (after shredding squeeze out the extra water)
- 2 tbsp miso
- Bunch of chopped Italian parsley
- Salt and pepper to taste
- 1/2 cup Kimchi
- Shredded Ginger for garnish (optional)
We are going to start with our Kimchi Nori & Peanut Rolls. This is a such an easy recipe and is incredibly delicious! Take your rice paper and run under water for about 5 seconds, let it sit until it becomes sticky, should only take around 30 – 60 seconds. Put down your Nori sheet, spread on the peanut butter just above the halfway point, sesame seeds and Kimchi. This will help with the rolling, next fold in the sides and roll it as tight as possible, the rice paper will help keep everything together! Check out our video for more details!
Take a small bowl, mix in the renaming peanut butter, rice wine and warm water along with a pinch of salt & pepper. Mix everything together with a whisk until smooth. Adds a nice kick to this meal! This is a great appetizer that is unique and always sure to impress!

Time for some Kimchi Fried Rice! Take your carrot, celery stock and 3/4 of your green onions (we will save some for the end!), dice them up. Heat up your sesame oil in a pan and saute the veggies until brown. Once that is done take your two cups of cooked brown rice, mix in for about 2 minutes. Take your Kimchi, chop it up and fry for another minute. Once cooked add in the remaining green onions, cilantro and serve!

Time for the Kimchi Rosti! This is my personal favourite (Conrad) as it’s unique but also really easy to make, well I guess that seems to be a trend for all of our meals! The Rosti is originally from Switzerland. Take your potatoes and shred them, the trick is, once shredded to squeeze out all of the juices, this will help them not break apart in the pan! Take your shredded potatoes and mix in the miso and chopped Italian parsley. Mix everything together. Take some grape seed oil and heat in the pan. Put everything in and form a large pancake in the pan.

After about 3 minutes, flip the pancake. It might break apart and that’s fine as you can use your spatula to form four smaller pancakes for a proper Rosti!
Once finished, take off of the pan and add the Kimchi on top along with the garnish and… you’re done – enjoy!
