Plant Based Asian Miso & Coconut Broth Recipe with Beautiful Soba Noodles & BBQ King Oyster Mushroom

Thank you for visiting our blog for another great recipe, both Chef Bernie and Conrad truly believe you will really enjoy the simplicity of this recipe as it packs a ton of favlour. This dish is Asian inspired and 100% plant based. The majority of traditional broths have pork in it and with this recipe, you won’t feel like you are missing out.

Chef Bernie has spent a lot of time in different parts of Asia building his culinary skills over the years and of course, enjoying all of the culture. His favorite place being Saigon in Vietnam.

Moving onto the actual recipe, which is why you are all here. This recipe is designed to feed two people. I’ve personally cooked it for myself and simply cut everything in half. Please find the ingredients below for your shopping list:

Ingredients

Broth:

  • 4 cups of veggie stock (go with the no or low sodium option!)
  • 2 tbsp red miso paste (found in the Asian or organic section in most grocery stores)
  • 1/4 cup of dried seaweed (found in the Asian section of your grocery store)
  • 1 cup coconut milk
  • ¼ cup soya sauce

Soup ingredients:

  • 100g of cooked soba noodles
  • ½ cup roasted corn kernels (seasoned with salt & paprika)
  • 2 oyster mushrooms
  • 1 fresh lime

Garnish:

  • Fresh chili’s
  • Fresh cilantro
  • Fresh spring onion

Pickled Daikon Radish:

  • Julienne of Daikon Radish
  • Rice Vinegar to taste
  • Sesame Seeds
  • Sea Salt to taste

Dessert:

  • 1 Cup of Soaked Black Sesame seeds
  • 2 Ripe Bananas
  • white toasted sesame seeds for garnish

Couple of quick preparation items that will help you save time so you are not waiting on certain items to finish. The key with mastering the kitchen is having everything ready at once and figuring out how to time it that way. For the roasted corn, toss it in a bit of olive oil, salt and some paprika, put it in the oven for about 10 minutes at 375. Also, get a large pot of water on the stove and start heating it up for the soba noodles, so you don’t have to wait, as the broth doesn’t take long at all to finish.

Now that you have all of your ingredients, let’s get this super easy to make broth started. You are going to LOVE the flavors. To prepare your dried seaweed, simply boil a cup of water, and soak it. It only takes about 2 – 4 minutes, rinse after. Add all of the ingredients for the both into a pot, excluding the seaweed and whisk everything to ensure the miso breaks down, then add in the seaweed. Bring to a boil and simmer for 5 minutes.

Great, your broth should be simmering at this point with the water boiling for the soba noodles. Get them in there and follow the cooking instructions on the package, they usually take 4 – 7 minutes to cook. Be sure to rinse with cool water after to avoid over cooking as the broth will heat them up after again.

As your noodles are cooking, get your king oyster mushrooms on the grill or give them a good pan sear until nice and brown using a bit of olive oil. These mushrooms really help the dish pop and are incredibly delicious.

For the quick Daikon Radish salad, cut it Julienne (thinly sliced). Add in the rice vinegar, black sesame seeds, salt and well, it’s ready! Super tasty, nutritious and delicious. We also paired this with our very own Back to YouRoots Kimchi.

Time to start assembling everything. Add the noodles into two bowls, remember, the nicer your food looks, the better it will taste so get creative, especially if you are cooking for someone!

Next add in the roasted corn and garnish. We also tossed in some spring onions. Next poor in the broth and ensure each portion gets an equal amount of seaweed. You will likely have some broth left over so do not just dump it all in for the sake of using it. You can enjoy any leftovers after! The most important thing to really wake this dish up and bring everything together is to use the juice of half a lime per portion.

Time to enjoy, you can make dessert after as you want to enjoy this right away for best taste. I can assure you, you will be surprised with how simple this recipe was to make and how darn tasty it is. Anyone you cook this for will be very impressed.

Ok, now that you’re done, time for dessert!

Very easy, take everything and put it into the mixer. If you do not have a powerful blender, you may need to add in a bit of almond milk. Add your garnish and you are done! It’s really that simple and delicious!
